The Advanced Programme is available for download.

On day two, Astrid Prajogo Founder & CEO of Haofood, will deliver a keynote talk titled ‘Clean-Label Creation: The Appeal of Additive-Free Plant-Based Meat’.

She said: Research has shown that for consumers in China, the first major considerations when purchasing meat are health and safety, then only followed by taste and quality and last but not least price. This means that the use of additives are a major hurdle in convincing consumers to adopt plant-based meat as parr of their daily diet, as it can be perceived as unsafe food.

“That said, additives are still often used in plant-based meat to deliver meat flavour and create the right texture. In this presentation, Haofood will discuss its journey in innovating the country's first clean label plant-based meat product whilst maintaining focus on taste and affordability.”

Key learning will include:

  • Who are the consumers of plant-based meat in China and their behaviour.
  • Key properties to consider in choosing plant-proteins for clean-label product.
  • Key principles in developing clean label plant-based meat.
  • Cost and benefit analysis of clean label plant-based meat.
