Hanson’s lily
These lilies grow naturally on Ulleung-do island and their young sprouts can be boiled and prepared as side dishes or ground and used with its roots for medicinal purposes. The roots of the plant used to be mixed with the sprouts but today this dish is rarely consumed. There has been a push for to restore Ulleung-do’s traditional food culture and so the roots and sprouts of the lily can be found in certain restaurants, usually in Bibimbap. But as it has become so rare, it is now illegal to collect the lily, which features in 37th place on Korea’s most endangered species list.
