Regional tastes extend to texture too, says CP Kelco

Regional preferences in Asia are not just confined to taste, textural preferences are also an important part of new product development, according to an Asia Pacific specialist at CP Kelco.

Gerd Frank Pedersen, regional country director for Southeast Asia, and Australia and New Zealand, told FoodNavigator-Asia that CP Kelco is looking to define textural preferences according to region and country, with a network of specialists throughout Asia Pacific.

Pedersen also said that concepts in the more mature Australian and New Zealand markets help to feed into the tastes for different texture preferences in the South East Asian market.
